Chocolate Logs

250g plain sweet biscuits, crushed

60g glade cherries, chopped

125g walnuts, chopped

60g hazelnuts, chopped

125g almond meal

2 tsp cocoa, sifted

200g tube sweetened condensed milk

1/4 cup liqueur of your choice (or orange juice)

200g dark cooking chocolate, chopped

Combine biscuit crumbs,glace cherries, walnuts, hazelnuts,almond meal and cocoa in a large bowl. Make a well in the centre, add condensed milk and liqueur, stir until ingredients are combined. Shape 1 cup of mixture into a 2.5cm x 15cm log. Repeat to make 3 more logs. Place on a plastic wrap-lined tray, cover and chill until firm. Place chocolate in a heat-resistant bowl over a pan of simmering water (don’t allow water to touch base of bowl) and stir until chocolate is melted.  Spread chocolate over logs and chill until set. Cut into slices to serve.
